• 2 New York Strip Steaks
  • 1 bunch Italian parsley
  • 6 cloves roughly chopped garlic
  • 3⁄4 cup extra virgin olive oil
  • 1⁄8 cup red wine vinegar
  • 1⁄4 teaspoon red pepper flakes
  • Salt and pepper to taste


  1. Pre-heat your Traeger grill or any BBQ grill to 250F.
  2. Generously season your steak with Mediterranean sea salt and fresh ground black pepper on both sides.
  3. Place your steak on grill until internal meat temp reaches 110 F. Remove and sear in cast iron with butter and olive oil. Cook for about 2 minutes on each side then remove and let rest.
  4. Make your Chimichurri sauce (Mix garlic, parsley, olive oil, red wine vinegar, red pepper flakes and blend in food processor. Add salt and pepper to taste.
  5. Slice your steak and generously coat with your Chimichurri sauce.
